Plank-Grilled Salmon with Lemon & Fennel

1 Large or 2 small cedar planks

1 Fennel Bulb, thinly sliced, plus ½ cup of the fronds

1 Lemon, thinly sliced

1 TBSP olive oil

2 ½ to 3 lb piece of salmon, skin on

Kosher salt & Pepper

Soak cedar planks in water for at least 30 minutes. Heat grill to medium. In a medium bowl, toss lemon and fennel in olive oil. Place salmon on the plank, season with salt & pepper, and top with sliced lemon and fennel mixture.

 

Place the plank on grill, cover and cook until fish is cooked through, 35-40 minutes. Sprinkle with fennel fronds before serving.
